I have a bit of a sweet tooth and I am always looking for excuses to cook a batch of chocolate yumminess- these do not disappoint.
Follow these easy steps to create these dark chocolate squares of goodness.
395g Sweet Potato
1 tbsp Coconut Oil
75g 85% Dark Chocolate
1 tbsp Peanut/Nut Butter
1 tbsp Honey
1 tsp Vanilla Extract
75g Ground Almonds
2 tbsp Cacao Powder
half tsp Baking Powder
half tsp Cinnamon
Pre heat oven to 190 degrees
Peel and chop the potatoes place into a bowl and cover with clingfilm then cook in microwave for 8 minutes
Melt the chocolate and coconut oil
Place all the wet ingredients (Peanut/Nut Butter, Honey, Vanilla Extract, Eggs) in with the chocolate mix together
Mash the sweet potato and place potato into chocolate mix and mix throughly until batter consistency. (If available use electric whisk for these two instructions)
Place all dry ingredients into mixture (Vanilla Extract, Ground Almonds, Cacao Powder, Baking Powder, Cinnamon) and mix together
Grease a 8 x 8 baking tray with melted coconut oil and pour mixture into tray
Bake for 25 minutes
Once baked tip onto wire rack and allow to cool.
Enjoy on its own or with some coconut ice cream. YUM
